I got this recipe from Difford’s Guide, which states that it’s “adapted from a drink created in 2011 by Lee Clinton.”
- 2 oz Tequila (reposado)
- 1 3/4 oz Grapefruit juice
- 3/4 oz Pineapple juice
- 3 dashes Angostura bitters
- 1/2 oz Vanilla syrup
Shake all the ingredients with ice then strain into a tumbler over ice.
This recipe looked light and refreshing, but not too long and a bit different. I altered it a bit, and I should know by now not to do this. I used vanilla liqueur instead of vanilla syrup. I did make some vanilla syrup, but I used demerara sugar, and I thought the result might be a bit dark for this. I used blanco tequila instead of reposado because I have a new blanco that I wanted to try out in a cocktail. I think the vanilla sub worked fine, the problem was with the tequila. It’s quite a delicate drink, and a softer, more rounded spirit would have been better. It was nice though – the flavours did basically go well together.
